Video: Kale and the Immune System

Kale or borecole is a vegetable with green or purple leaves, in which the central leaves do not form a head. It is believed to be closer to wild cabbage than other cruciferous vegetables. Consuming kale, juiced or lightly steamed, has many health benefits, including protecting us from cancer of the bladder, breast, colon, ovary, and prostate. As Dr. Michael Greger explains in this video, isothiocyanates (ITCs) made from glucosinolates in kale play a primary role in achieving these benefits.
